Easter Bundt Cake

Easter is the perfect time to gather with loved ones and indulge in delicious homemade treats. This beautifully baked Bundt cake is a true centrepiece for your Easter table - light, fluffy, and full of seasonal flavours. Whether you're hosting a brunch, afternoon tea, or simply fancy a sweet treat, this recipe is sure to impress.

Ingredients for Easter Bundt Cake:

  • 225g and 1 tsp butter, divided
  • 200g sugar
  • 4 large eggs, room temperature
  • 1 vanilla bean pod
  • 180g plain flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 tbsp milk
  • 60g white chocolate, melted
  • Mini eggs to decorate

Method:

Step One: Preheat your oven to 350°F (175°C). Prepare a 9-inch bundt pan by melting one teaspoon of butter and using a pastry brush to grease the inside of the pan generously.

Step Two: In a mixing bowl, beat the remaining one cup of butter with the sugar until the mixture is light and fluffy. This should take a few minutes for the best texture.

Step Three: Add the eggs one at a time, ensuring each egg is fully whisked before adding the next. This helps to create a smooth, even batter.

Step Four: Slice the vanilla pod lengthwise and scrape out the seeds with a knife. Add the vanilla seeds to the batter and mix well.

Step Five: In a separate bowl, combine the plain flour, baking powder, and salt. Gradually add this to the wet cake batter, stirring slowly just until the flour is mixed.

Step Six: Spoon the batter into the prepared bundt pan, smoothing the surface for an even bake. Place the pan in the centre of the preheated oven and bake for about 40 minutes. To check if it’s baked, insert a skewer into the cake – if it comes out clean, the cake is ready.

Step Seven: Once baked, remove the cake from the oven and let it cool in the pan for 15 minutes. Carefully turn the cake out onto a cooling rack and leave it to cool completely for about an hour.

Step Eight: When fully cooled, drizzle melted white chocolate over the top, letting it cascade down the sides for a beautiful finish. Decorate with mini eggs for an Easter touch.
