This delicious and tasty recipe makes a perfect summer statement for any dinner party dessert, courtesy of our wonderful friends at Doughlicious. It pairs perfectly with our Strawberries collection for a lovely spot of baking and a sweet summer treat.
Ingredients:
- 1 pack of Salted Caramel and Dark Chocolate Cookie Dough
- 1 pack of Eton Mess Dough.chi
- 2 pints of strawberry ice cream
- 100g of strawberry yogurt
- 1 pint of fresh strawberries
- 6 meringue drops/pieces
Method:
- Bring your cookie dough to room temperature if it is frozen
- Using a 6 inch cake mould place a sheet of baking paper at the base of the tin
- Mush all the cookie dough pucks to make a disc that will fit into the base of the cake tin
- Now place all 6 eton mess dough.chi on top of the cookie dough
- Using an icecream scoop cover the dough.chi in ice cream
- Make sure to push into any gaps so there are no air pockets
- Smooth the surface of the ice cream and allow to set-up in the freezer for 4 hours minimum or overnight
- Remove from the freezer and use a knife to release the ice cream cake
- Frost with a little strawberry or greek yogurt, strawberries and meringue
- Cut the cake open to reveal the dough.chi surprise
