Nduja & Broccoli Pizza

Our friends at Ooni Pizza Ovens have shared this delicious pizza recipe. Nduja, a spicy, spreadable pork sausage from southern Italy, combines with fresh broccoli and crushed garlic to bring you a fiery and unique pizza. Topped with creamy mozzarella and freshly shaved parmesan cheese, this recipe for Nduja & Broccoli Pizza is sure to become a classic!

Makes 1 x 12/16" pizza

Nduja & Broccoli Pizza Recipe

Ingredients

  • 8.8/11.6oz (250/330g) classic pizza dough
  • 5 tbsp (90 ml) classic pizza sauce
  • Olive oil
  • 2 garlic cloves, crushed
  • 4 broccoli florets, cut into smaller pieces
  • 1.8 oz (50 g) mozzarella, torn into small pieces
  • 3.5 oz (100 g) nduja sausage, rolled into small balls
  • Shaved parmesan cheese

Method:

  1. Prepare your classic pizza dough and classic pizza sauce ahead of time.
  2. Heat a skillet on medium heat. Add the oil and sauté the broccoli for a minute, stirring frequently. Add garlic and continue to cook until the broccoli is tender-crisp, about 1 minute. Remove pan from heat.
  3. Preheat your Ooni pizza oven to 500˚C (932˚F). Use the Ooni Infrared Thermometer to check the temperature inside the oven.
  4. Sprinkle your Ooni pizza peel with a light dusting of flour. Place the dough ball down and flatten with the palm of your hand. Press the dough gently with the tips of your fingers, working from the centre to the outer “crust”. Gently pick up the dough and stretch it out to 12/16”, allowing the weight of the dough to stretch it.
  5. Spread the classic pizza sauce evenly across the dough, leaving a 1 inch border for the crust. Dot the surface of the pizza with chunks of mozzarella. Top with an even layer of the nduja balls and cooked broccoli.
  6. Slide your dressed pizza off the peel and into your Ooni pizza oven. Cook the pizza, rotating frequently, until the cheese is melted and the crust is crisp with small charred bubbles. In your Ooni pizza oven, this only takes a few minutes!
  7. Remove the pizza from the oven and let cool for one minute to allow the cheese to firm up slightly.
  8. Sprinkle pizza with a thin stream of olive oil and finish with a generous portion of shaved parmesan, to taste.
